Description

This is a Vino de Pasto, effectively an unfortified Fino Sherry. It is made from same grape variety, Palomino, and aged in a similar way, under flor, which gives it a yeasty, savoury character. This cuvée is sourced from the famous El Notario vineyard in Macharnudo Alto. The grapes are sun-dried for eight hours; fermentation is with wild yeasts, in 600-litre bota; and ageing is under flor for 20 months. The nose is perfumed and floral. The palate shows bright lemon, peach and salted almonds with a dense, slightly chalky texture and a fresh, mineral finish. Enjoy this now with savoury foods or cellar it for a few years to watch it develop.
