The Cotswolds Distillery, Flaxen Vale, Single Malt Whisky, England (53.9%)
- World Whisky
Description
This is the second iteration in the Cotswolds Harvest Series of bottlings from this sustainably minded English distillery. Aged in three kinds of casks: Spanish oak, which previously held Pedro Ximenez Sherry; American oak, which previously held Oloroso; and barrels that had previously aged half-peated whisky, there is a huge mix of flavours here. The flavour grows with each sip, from fruit cake to gentle smoke wafting around. The palate rounds out with notes of purple jam on slightly singed toast; delightful.

Barley
Barley is a key ingredient in the production of some of the world's most renowned spirits, particularly whiskey and Scotch whisky. Malted barley is used as the primary grain in many single malt and blended Scotch whiskies, where it contributes a distinct malty, nutty, and sometimes smoky flavour profile. In addition to Scotch, barley is also a staple in the production of Irish whiskey, where it often lends a smoother, creamier taste. The versatility of barley as a grain makes it a favorite for creating complex and deeply nuanced spirits cherished by enthusiasts worldwide.
