Description
This spirit is first aged in ex-Bourbon casks and then finished in barrels near Thornbridge Brewery, where it is used to make Necessary Evil, a delicious and award-winning imperial stout. To make this even more complex, for this 2023 release, the ex-Thornbridge barrels an even earlier life, being used to mature richly sweet Pedro Ximenez Sherry. The result is oodles of dark and dried fruit here, bitter chocolate, and toffee notes with lovely, sweet, malty touches that balance things beautifully.
