Waterford, Biodynamic Luna 1.1, Single Malt Whiskey, Ireland (50%)
- Irish Whiskeys
Description
The first whisky to be made from biodynamically-farmed barley, this has lively flashes of sour cider, wet grass and white pepper on the nose, with a backbone of heritage pears and a sweet metal hint of lanolin. A drop of water brings out notes of fresh flowers and fleshy peach.
The palate is a tasty marriage of cow’s yoghurt, oats and the first chew of apple-flavoured Hubba Bubba. A little water brings satsumas and a touch more pepper to the fore.
The finish is persistent and cereal, with traces of mirabelle and gooseberry, and evocative hints of orange oils and tea tree.

Barley
Barley is a key ingredient in the production of some of the world's most renowned spirits, particularly whiskey and Scotch whisky. Malted barley is used as the primary grain in many single malt and blended Scotch whiskies, where it contributes a distinct malty, nutty, and sometimes smoky flavour profile. In addition to Scotch, barley is also a staple in the production of Irish whiskey, where it often lends a smoother, creamier taste. The versatility of barley as a grain makes it a favorite for creating complex and deeply nuanced spirits cherished by enthusiasts worldwide.
