Description

Something of a cult wine, this comes from three parcels in the Paradis lieu-dit. As the name suggests, it sits above a quarry; the vines are planted directly on limestone. Reductive and chalky, this takes a little time to open, revealing bitter lemon fruit and a fine bead of lime-laced acidity. A pristine 2010 afterwards highlighted its age-worthiness. Drink 2024-2035.

The 2020 Chablis Dessus La Carrière has a slightly reduced nose, but one can still gauge the concentration in this Chablis. Touches of honeysuckle and melted wax eventually emerge. The palate is fresh and saline on the entry, then a little herbaceous, strict and linear, with a fine bead of acidity and bitter lemon defining the finish.
